A Delicious Carbonara for moms on a tight budget

A delicious carbonara for this tough time...


The holidays are fast approaching and it really seems inevitable at this part of the year not to spend our hard earned money so fast we'll just realize that all of it are spent already. So starting today , I'll try to find ways to help everyone to have a happy holiday without spending all their bonuses and ending up broke in January.

Cheese Carbonara

Ingredients:
1 tbsp olive oil
3 tbsp butter
200 grams of ham
3 eggs (beaten)
3 tbsp evaporated milk
1 tbsp thyme (dried)
300 g spaghetti (dried)
90 g cheddar cheese (grated)
Salt and pepper

Procedure:
1. Boil pasta until al dente.
2. Heat the oil and butter in a frying fan until the mixture is just beginning to foam.
3. Add the bacon and fry it until golden brown.
4. Ass 2/3 of the cheese.
5. Mix together the eggs , milk and thyme. Season with salt and pepper.
6. Add the cooked pasta to the frying fan with the egg mixture for 30 seconds or until the eggs is beginning to cook and set. Do not overcook the egg.
7. Serve the pasta. Sprinkle the remaining cheese on top.


For a quick cook, (like when a visitor suddenly appear in you doorstep and you don't know what to serve) use a quick cooking spaghetti. They have holes on the middle which makes it better because the sauce is more absorbed and they you'll have pasta al dente for 4 minutes.

a random song

It still makes me wonder how a random song can affect your mood for a day.. This week will be the defining week of our current life. I have been expecting my answer from God on the 20th. It will be this friday..After 30 years here on the planet earth I still depend my life on prayers and signs from above and He never ever fails me. I am quite sure a few wold say it's quite imprudent to let signs control my life. And what if the signs were misconstrued...But 8 years of practice makes me so good in reading the signs.
There were days like today that vexations overpower me. And then all of a sudden a random song calms me. A random song which appears to have random lyrics. But as I hear the song play over and over again I suddenly understood the composer. I was a fat house cat watching the warm poison rat.
Yes I am just watching and doing nothing..Waiting for my muse..Still waiting for the right time..though I don't know when is the right time.
I like sharing my opinions and I really have a lot..

graduation schmraduation

While tuning in on my fave AM station, I heard one of the host jokingly mocking the other host about the graduation of his son in prep..I really find it so funny,being a mom of a 5 year old boy also who just graduated in prep. Some of my neighbors asked me if we will have a graduation party because he received several medals and a ribbon.I remember last year, they asked the same question and I answered the same reply.."Gosh,he's just in preschool and he's got a very very long way to go.."I'll give him a grad party when he finish college..
Graduation, specially in preschool, for me has been over emphasized..I even heard some of my friends who really traveled a long distance just to attend the graduation of their nephew in kinder.Then next year, the boy will graduate again in prep..So if your child started schooling at the age of 2, you'llll most like;y to attend 5 graduation rites before he goes to grade 1.My son spent 3 weeks in nursery, then he was transfered to kinder last year. So he had two graduation rites.
But of course, that's how loving parents and relatives show their appreciation to the children.So what if we pay 4 times for their expensive grad fees and prepeare gifts every year.What matters most is that they would know that their efforts were appreciated..Hey! I cried everytime he walked to the stage to take his certificate.This year I cried even harder when he delivered his speech. I am so proud of my son because his little speech summarizes all his feelings and ours too. So I'll share it to everyone.

To our directress,to the honorable guest speaker,to the teachers and staff, to the parentsand guardians, a pleasant day to all of you and welcome to this years commencement exercise.Today is the most significant day of our school year when all our hardwork and perseverance pay off.The collective efforts of our teachers and parents made our learning more of a bliss.So let us pay them back by studying harder and make them proud of us, graduates.but before I end my speech,I would like to share my favorite mantra that I always say to myself whenever I feel frightened..be the best you.Kayang kaya mo.

A holey week

I woke up late this morning when I heard my son screaming from the adjacent rooftop of my in laws’ house. He started swimming already in the rectangular inflated swimming pool that my husband set up the previous day. He asked his Lolo that he fondly calls Ney which is short for Honey to bring his brunch on the rooftop instead of eating on the kitchen. Being the doting grandparents as they are, my parents let their Apo to eat his brunch, lunch and snacks on the pool. They just spoon-fed him throughout the whole time while my son is on the pool swimming, pausing only when he’s about to be spoon-fed and parents sat on their Apo’s side the whole day, watching him in amazement. We can’t get him out of the water because he always asks for his Lolo’s backup. Because they have been both very nice, my father and my son, and never imposing it’s kind of heart wrenching to stop their enjoyment we were only allowed to dry him up when one of his playmates in the pool got sick.
During the day, I suddenly remembered that it’s a Holy Thursday. I felt uncomfortable knowing that I haven’t shared to my son the spirit of the holy week and why it is celebrated. All of a sudden all the reminiscing began. I recall those days when I went with my previous family and friends to attend the 14 Stations of the Cross which is spread to all the barangays of our parish. How we never bring food or water for fasting but we never felt hungry. Then we end up in our chapel for the pabasa where all the kantoras of our barangay sang the passion of Christ. On Good Friday we were not allowed to swim on the rivers or play but instead we watch Lenten movies to remember our Lord’s sufferings. All the merriment is reserved on the Easter Sunday after the Pagkabuhay, that’s the time when we went to the beach and celebrate. I shared my discomfort with my husband’s mother and she went through her own reminiscing also. Then we have finally come through a resolution that the time is changing so we should also. I have to be in the middle. I should enjoy our vacation and at the same time I have to uphold my traditions. I persuaded her to host the 11th station of the cross and then I went with the procession. As for my son who is currently sleeping now while I am blogging, I am planning to tell him later the story about the person who let him be crucified to save the people who have been throwing stones at him. And I made plans with my husband who is a black Nazarene devotee to go to Quiapo church tomorrow which we have been doing since the year before we got married. I guess that would be halfway enough to satisfy both my beliefs and fast changing world.
